Coleslaw is a great tailgating side because it pairs well with grilled items and sandwiches and can be made to suit any taste. Chef Wolf shows us an original recipe and a Southwestern variation.       ***This exciting event is available exclusively to ACI students*** Basic Baking instructor, Chef Jason Warden, will be holding a Sushi class from 2:30pm-4:30pm on January 30, 2008. Interested students are encouraged to sign-up in the Administrative office as soon as possible; availability is limited to 20 students. A small fee for supplies will be collected upon registration. Take advantage of this great extra-curricular activity!

    • Chef Crystal Hagans, RD to appear on Sonoran Living Live

      Chef Hagans is going to teach viewers how to make a romantic and classic dessert for Valentine's day- Chocolate dipped strawberries! Dipped strawberries are very easy to make, requiring few ingredients and even less time. This dessert can be made in advance of the occasion and are the perfect treat to come home to after an evening out celebrating.

    • Arizona Dietetic Association Meeting (Central Conference)

      ACI is pleased to host the Arizona Dietetic Association's Central conference meeting. "Trends in Food & Nutrition" is an all day conference that will entail various presentations, discussions, and a vendor fair. Topics will include pediatric food allergies, health legistation, and dietary supplements. Two of ACI's own instructors will be presenting.       Chef Christopher Wolf will be making a "Warm Mushroom Salad with Crostini" today. Chef Wolf noticed that many home cooks shy away from "exotic" mushrooms despite how readily available they are. Different varieties of mushrooms are easy to cook with and add instant elegance to any recipe. This week's salad incorporates four kinds of mushrooms and a simple vinaigrette.       ACI's Chef Wolf will again be appearing on Sonoran Living Live. Today's topic will be an educational one- how to clean and cook fresh artichokes. Chef Wolf, who instructs our "Advanced Cuisine- du Jour Restaurant" class, teaches the importance of using fresh and seasonal ingredients in his kitchen classroom and at home. Artichokes are coming in to season and Chef Wolf wants Sonoran Living Live veiwers to cast aside the expensive marinated jars and enjoy artichokes at their best- when fresh!       Arizona Culinary Institute's students are excited to be participating in the 17th annual "Mystery Chef Dinner" organized and hosted by the East Valley Institute of Technology (EVIT). The decor and theme change each year (this year's theme is "Island Paradise") but the concept of the evening remains unchanged- diners enjoy a four course meal prepared by a renowned Valley Chef whose identity is reavealed once the meal begins. Last year's participating Chefs included Mark Tarbell of Tarbell's, Matt Carer of Zinc Bistro, Paul Mueller of Teneko in the Borgata, and Glenn Humphrey of the Arizona Culinary Institute. ACI's Advanced Baking Instructor, Chef Jennifer Sedig, will be teaching the Sonoran Living Live audience how to work with molding chocolate and marzipan. Most people have never attempted to work with chocolate because they assume it is an advanced skill, but Chef Sedig will show you how easy it really is!       ****This exciting event is available exclusively to ACI students**** Chef Jennifer Sedig is holding a spring-themed chocolate showpiece class. Students will learn how to make a decorative and seasonal showpiece that will be ready to bring home and display on the same day. This class will be held at 2:30pm in the Advanced Baking kitchen and is open to students of all skill levels. ACI graduates, as always, are more than welcome to attend. This class costs $20, which includes all supplies and personalized instruction.

    • C-CAP Final Competition

      The staff of Arizona Culinary Institute is thrilled to be hosting the C-CAP finals for the second consecutive year on March 29. C-CAP, Careers through Culinary Arts Program, "works with public schools across the nation to prepare students for college and career opportunities in the restaurant and hospitality industry." Senior high school students who have successfully passed preliminary competitions are eligible to compete for culinary scholarships at the finals. Students prepare memorized recipes to be judged by local industry professionals. This event is very exciting as students are competing for valuable scholarships, including two ACI scholarships!       For the second consecutive year, Arizona Culinary Institute will be hosting the Arizona Women's Partnership's Wine, Women, & Jazz fundraising event. Attendees will enjoy live jazz music featuring Blaise Lantana, Delphine Cortez, and Margo Reed from 4:00pm to 6:30pm.     • Culinary Camp - June 23 - 26, 2008

      Arizona Culinary Institute is welcoming aspiring culinarians between the ages of 16 and 20 to participate in “Culinary Camp.” This camp caters to serious students who are passionate about cooking and want to learn at a collegiate level. Our program is designed to give students a basic yet thorough overview of the Culinary Arts with a curriculum that includes saucier, knife cuts, sanitation, doughs, and chocolate techniques. In addition to the instruction of two of our finest Chefs, students will also receive a Chef’s coat, Chef’s hat, apron, ACI T-shirt, and a three piece knife kit. Applicants should have a love of food, but do not need to have culinary experience. Students are accepted on a first-come, first-serve basis. Register early to ensure your space in the kitchen- enrollments are limited to 30 students to ensure personalized attention. ACI Culinary Campers will spend their entire day in one of our five professional kitchens so come prepared to play with food!
